We have developed a range of yeasts specifically for use in various spirit and other distilled alcoholic beverages.

The products listed have been designed with complete nutrition where necessary, for the particular spirit or beverage category in mind.

Active dried distillers yeast blended with chemically defined nutrition for production of vodka spirit.

Product Description and Function

Active dried distillers yeast for high purity ethanolic fermentations up to 14% ABV from any suitable starch based substrate. Blended with chemically defined nutrients specially designed for the fermentation of vodka spirit.

The yeast nutrients contained in this product are pure, macro and micro nutrients chemically defined to provide all essential yeast fermentation requirements. Optimum alcohol quality is ensured through use of readily assimiable nitrogen from urea source and inclusion of a vitamins and trace mineral complex for stress-free fermentation.

Dosage and Application

For use with any starch substrate such as wheat, grains, potato or pure sugar substrate to produce vodka spirit. Starch-based substrates must be enzymatically converted to fermentable sugars using alpa-Amlyase and Glucoamylase.

Add TY96 Vodka Turbo Yeast at a dose rate of 2.7kg/1000L directly into fermentation vessel providing vessel has mixing facility. If fermentation vessel has no mixing facility then add to 10 times its weight of warm water (30-40ºC), mix for 5 minutes then add into the substrate solution.

Active dried rum distiller’s yeast blended with complete nutrition plus glucoamylase enzyme.

Product Description and Function

A specialist active dried rum distiller’s yeast blended with a complete, chemically defined urea-based nutrient complex, containing all macro and micro nutritional requirements for the yeast, including nitrogen, phosphorous, magnesium, essential vitamins and trace minerals. This product also contains amyloglucosidase enzyme (also known as glucoamylase) for conversion of dextrin sugars into fermentable sugars during the fermentation process.

Rum Turbo Yeast can be used to ferment any fermentable sugar substrate up to 15% ABV, but best results are achieved using sugar juice or molasses. (Note that due to the osmotic pressure exerted on the yeast in a high gravity environment, the maximum alcohol achievable from a pure molasses solution is approx. 12% ABV).

The distiller’s yeast strain selected for Rum Turbo Yeast produces an optimum congener profile for rum spirit and is highly viable and robust, ensuring a short lag phase and reduced risk of bacterial infection. The inclusion of all essential nutrition for yeast fermentation requirements ensures optimum spirit alcohol quality through stress-free fermentation.

Dosage and Application

For optimum quality Rum Turbo Yeast should be used to ferment sugar juice up to 15% ABV or a molasses solution with a gravity of up to 1.150 to achieve a maximum ABV of approx. 12%.

Add Rum Turbo Yeast at a dose rate of 2.9kg/1000L direct into fermentation vessel providing vessel has mixing facility. If fermentation vessel has no mixing facility then add to 10 times its weight of warm water (30-40ºC), mix for 5 minutes then add into the substrate solution.

For optimum performance pitch Rum Turbo Yeast into fermentation media at 30—35°C before fermenting at between 20 and 30°C liquid temperature.

Active dried distiller’s strain with high gravity and temperature tolerance for use in malt or grain whisky production.

Product Description and Function

Whisky Distiller’s Yeast is a specialist active dried Saccharomyces cerevisiae strain which confers an optimum, highly refined congener profile for whisky spirit. This strain is suitable for production of both malt and grain whiskies and is used extensively within the Scotch whisky distilling industry.

With good ethanol tolerance up to 15% ABV, and excellent temperature tolerance up to 38°C, this strain confers an optimum congener profile to the distilled spirit, resulting in whisky with exceptionally well refined organoleptic qualities. Highly viable and robust, this distilling yeast strain is quick to start and displays good fermentation kinetics with rapid and reliable fermentation.

The flavour profile of distilled spirit is well-balanced, smooth, and elegant, with moderately high fruity esters, feinty and soapy notes, and relatively low peat notes. Compared to some distilling strains, minimal ageing is required to produce a well-refined whisky spirit.

Dosage and Application

For use in malt or grain fermentation intended for the distillation of high quality whisky spirit.

Whisky Distiller’s Yeast can be pitched directly into the fermenter at a rate of 0.5-1g per litre of wort. Pitch rate can be adjusted depending upon the process (required ABV, fermentation period etc.)

Alternatively, the yeast can be rehydrated in ten times its weight of water previously adjusted to between 34 – 38°C and agitated for 5-10 minutes before transfer into fermentation vessel.
